Sorry I've been absent from my blog for a couple of weeks. I've been working almost every day and also have some other things going on, but wanted to check in this week with a blog post.
I hope all of you are doing well and had a wonderful Thanksgiving. 🎩
We spent the day with my brother-in-law and his family and friends and had a very good time. 🎃🦃
I made up several things for lunches for the coming week. First off was Tuna Pate, which I placed into small containers for my daughter to take for her lunches. She gets tired of sandwiches, but she can take some crackers with her and spread the tuna on those for her lunches.
I also boiled two dozen eggs for lunches. She was getting tired of egg salad, so this is a better solution and still affordable for lunches.
I've also been making a large stockpot full of soup on the weekend and dividing it up into these 2 cup containers that I purchased at Sam's Club. I've been doing this for the last month and it has been terrific to grab and go for lunches during the week.
This is some vegetable chili I made this weekend. We ate on it for Sunday Dinner and then I was able to make 8 containers up for lunches this week.
A great deal I found this week was one pound bags of garbanzo beans at Publix. I bought five bags. These will be great for hummus and mock tuna salad.
Have you posted the mock tuna salad recipe for the garbanzo beans? that sounds interesting and a certain budget stretcher.
ReplyDeleteSam, I cook and soak the beans as I normally would. Then I add them to my food processor and pulse until I get the consistency I want and then I add mayonnaise and pickle relish. My crew loves it!

It is the very reason I wanted them because i was so tired of my soup containers leaking.

Glad you are ok and had a wonderful Thanksgiving. We had a very nice day with family and got to spend time together. How much are they charging for the plastic containers if you don't mind answering. There is an area about a hour from us called the strip which has stores that sells both wholesaler and retail. I can get them for about 50¢ each and can buy as many or little as I want. The also sell the bigger container. They go through the dishwasher with no problem and keep soup from spilling in my dh's lunch. Cheryl

50¢ is a great price for those containers. This was a HUGE box of them almost 200 I think and it was right at $20. I love the fact that they do not leak. Best bowls ever. :)
Glad things are going well for you and yours! That was a great deal on the garbanzo beans! I haven't tried the tuna pate yet but bought a can several weeks ago to try it. I love them on top of my salads as a garnishment too but haven't had any salads lately. Today I have the leftover turkey I pulled off the carcass with a bag of baby carrots and will put the abc pasta in in about an hour and will be having turkey soup for dinner for around $2 (the turkey was leftover free from my brother).

Good to see you posting, Belinda. So smart to preplan for lunches on the go. My DD has recently been diagnosed with IBS-D, and is on a combination of medically restricted diets: GERD, Gluten free and FODMAP. Cooking for her has been a real challenge but we try to plan at night for the next day, to help things go smoothly for her. Grab and go is quite popular!

Great price on the chickpeas. I made falafel balls last week and they were pretty easy to make using ingredients I had on hand. I've also used them for "mock meat" salads. They're a great addition to salads, soups, and casseroles.
I love these containers so much. All the other ones I had would leak ad I would have to put them in a ziplock bag, but these are fine without the ziplock bag.
