Sunday Dinner


Dinner at our house tonight is Hobo Packets. These are a simple dinner made up of a ground beef patty, onions, potatoes, carrots, and seasonings. 

I start by peeling and cutting up my potatoes, carrots, and onions. 




I mix my hamburger with onions, salt & pepper, worchesteshire sauce, and make patties with it. 
 

I spray a sheet of aluminum foil with olive oil and then layer one hamburger patty, one slice of onion, potatoes and carrots and then add additional salt and pepper.


I wrap them up into individual foil packets and bake in the oven.


They are easy to make when I have all the ingredients lined up in a row. This is how they look on the baking sheet all ready to go into the oven. 



And of course, this is the finished product:


As I've mentioned before, my daughter has recently showed an interest in cooking as well. She has even started her own food blog over at A Frustrated Teen Cook.

She contributed to tonight's dinner as well by making a batch of homemade ranch dressing and a batch of fried pickles.




And they were delicious! :)

  1. Belinda! Yet another lovely post! This is such a great and simple idea. I have some salmon in the freezer and I think I may do something like this with it. Tons of lemon and rosemary maybe. Its cool that your daughter is cooking! I may check out her blog

    1. Thank you, Nico. Your Salmon Packet would be terrific! We really like salmon here. My daughter would love it if you checked out her blog. She doesn't post very frequently, but she is enjoying it. :)

  2. Belinda, those hobo packets are so good when camping. If you want to mix it up next time, try adding some BBQ sauce, ketchup or Italian dressing (the cheap stuff works great here) or some canned, stewed tomatoes-YUM!

  4. I love hobo packets. We used to make these when we'd go camping.

    I've never had fried pickles. I'll check out your daughter's blog. I'd definitely like to know how to make them.

    1. They are easy to make, Shara. I never had these growing up in the north and did not know about them until I moved South. A lot of restaurants here serve them.

      She has not posted the recipe there yet, but I'll post it for you here. :)

      Fried Pickles

      Ingredients

      Milk mixture:
      1 c. milk
      1 egg, beaten
      1 tbsp. flour
      1 tbsp. Worcestershire sauce
      6 drops hot sauce

      Flour mixture:
      3½ c. flour
      3/4 tsp. salt
      3/4 tsp. pepper
      1 qt. sliced dill pickles
      Dried dill (optional)
      Vegetable oil for deep frying

      Directions:

      Combine first 5 ingredients, stirring well. Set aside.
      Combine 3½ cups flour, salt and pepper, stirring well.
      Dip pickles in milk mixture and dredge in flour mixture, repeat process.
      Fry in hot oil until pickles are golden brown.
      Drain on paper towels.
      Sprinkle with dried dill to your liking.

  5. Great idea for an at home dinner. I would never have thought of doing burgers that way.

    I'll have to take a look at Bailey's blog. If it's anything like her mom's, it's probably terrific. Tell her the pickles look yummy. Living in New England I have never tried them and hardly ever see them on the menu here.
