Sunday Dinner: Meatloaf
There are a lot of recipes out there for meatloaf and this is how I make mine. You can tell from the photo I took yesterday that I was using up the last of two different bottles of ketchup. I had a new bottle of hand, but I wanted to use these up before I opened the new bottle.
I start by cutting up the green peppers and onion:
Then, using my food processor, I make crumbs out of the saltine crackers:
Today, I used eggs fresh from our chickens:
Afterwards, I mix all the ingredients together in one of my big bowls and then shape this into a loaf in the crockpot. This is the finished product:
Here is a breakdown of the recipe:
Meat Loaf
Ingredients:
2 pounds ground beef
1 to 2 packages saltine crackers
1 cup ketchup
1/2 cup milk
2 large eggs
1 large onion, chopped
1 large green pepper, chopped
Worcestershire sauce - just a splash
Salt & Pepper
Dad brought us a huge head of fresh broccoli from the Flea market that he picked up for $1.00. I wish I had taken a picture of it because it was big! So, I served the meatloaf with steamed broccoli, corn, and peas.

Our Sunday dinner was a bit of a mish mash this week -- pasta with mixed veggies, turkey and pasta sauce, topped with cheese. Mot one of my better creations! But we ate it anyways, along with tangerines, cookies and nuts. I said it was a mish mash. Hopefully tonight's dinner will be better!

DeleteLOVE meatloaf, especially in a sandwich the next day. I add a bit of freshly grated Parmesan and some ground sage or poultry seasoning to mine, along with chopped celery
ReplyDeleteYum, those all sound like good additions, Carol. I also enjoy meatloaf sandwiches. One time I chopped the leftovers up and added it to spaghetti sauce and my daughter asked me if I put the meatloaf in the spaghetti. lol
