Quick Update

It's hard to believe another week has already come and gone. I ended up working four days this week and visiting Mom every night at the hospital.  On Thursday evening they finally moved her out of the SICU and into a regular room. Hallelujah!  She is still not back 100% mentally, but I hope that continues to improve. She will need physical therapy to regain the use of her arms and legs, but she is much better than she was.

When school let out this week at 3:00 we would make the mad dash home to get home by 3:30 and try to make something quick to eat and be out the door by 4:15 to get to her hospital room by 5:00 for the 30 minute visiting time. I made simple things for dinner like Salmon Salad Sandwiches, and Bean & Cheese Burritos. One night I took the frozen Mexican Rice I keep in the freezer and microwaved it and added canned chili and cheese and sour cream and made wraps with them. 

Anything I could make easily was what we had for dinner. And it worked! We did not eat out any time this past week and I am tickled over that fact. At the end of the week I usually have a couple of receipts to enter into my checkbook, but not this week! And if we did it this week, we can do it again. :)

  1. Woo hoo!!! We are bracing for Hurricane Sandy, and ironically, all the food I have is in the fridge/freezer :-/. Thinking learning how to can might be useful! LOL. Out today to pick up packaged meals to whip up in case we lose power. So...technically, not a frugal week! Unless we don't lose power, and by keeping and using the prepackaged stuff later on, it *will* end up being frugal. Glad we have a gas stove, that's for sure...

  2. Hi Belinda,
    I'm so glad that your mom is making improvements. This must've been so worrisome for you. And exhausting. If possible, try to do some nice things for yourself, so you can recharge, like get a funny movie from the library to watch and laugh a lot, or taking a long walk, or sleeping in.
    You will definitely have a thankful Thanksgiving this year!

    1. Thank you, Lili. I have a cold right now. I'm sure it's because of the exhaustion and just getting worn down from all of this, but I'm doing my best to take care of myself.

  3. Oh dear...where were my manners/caring? Still praying on your mother's recovery. Just tense due to the hurricane and I got off the computer after my original comment. Glad to hear the update...and of your ability to not eat out!

  4. Great planning on your part eating home. As you know, I'm glad things are looking somewhat better for your mom and wish you all continued good thoughts. Just don't wear yourself out. Take a moment to step back and breath and care for yourself and Bailey.

    So glad to see that Mom is out of ICU. Great also that you were able to keep costs to a minimum, eating at home vs being tempted by alternatives.
