Saturday Night Dinner

Tonight’s dinner is a meatless meal. We are having loaded baked potatoes. This was one Amy Dacyczyn’s (author of the Tightwad Gazette) meatless meals she fed to her family of six.  She would top them with chopped, steamed broccoli, cheese sauce and a sprinkle of bacon bits. Ours were topped with choice of butter, sour cream, broccoli, block olives and/or cheddar cheese. 

Last night's dinner of Pork Roast, Potatoes, and Carrots was a winner. Although I didn't take any pictures or even make a post last night, I wanted to mention how nice is was to come home to a home cooked dinner. I am definitely going to be using the slow cooker more often to help save money. 

Having said that, here is an updated copy of the dinner menu I posted on January 2, 2012. Those dinners I've made have been scratched through and the other dinners are in no particular order. 

1.       Chicken Enchiladas, Mexican Rice
2.      Meatloaf, Mashed Potatoes, Broccoli
3.      Loaded Nachos
4.      Grilled Chicken Salads
5.      Pork Roast, Potatoes, Carrots
6.      Baked Potato Bar, Steamed Broccoli
7.      Tacos with all the Fixings
8.     Salmon Patties, Green Beans with Onions, Mashed Potatoes
9.      Bean & Cheese Enchiladas, Mexican Rice
10.  Veggie Burgers, Tator Tots, Stir-Fry Vegetables
11.   Homemade Chili
12.  Macaroni & Cheese, Stir Fry Vegetables 

 There are several items I have run out of this week, like onions, and a trip to the grocery store is in order soon, but it's nice to know that I have enough food on hand to make all of these meals and more. Bob Waldroup, president of the Oklahoma Food Coop, says in his article on Eight Steps to Family Food Security, that it is important to keep some of your family’s savings in the form of food, and I agree with this wholeheartedly.

  1. A vegetarian based meal or 2 or more! during the month can certainly help stretch food dollars!

  2. I'm not a big potato eater (or I wasn't until recently) but I do love a good stuffed baked potato. This is another thing from the Tightwad Gazette that I found useful--it reminds you about basic things that can save you money and time. Topping baked potatoes with chili or vegetables and cheese makes for a great (and quick) meal. I also like these because let's face it, on any given weeknight, I'm not inclined to whip up anything fancy.
