This Week in my Frugal Kitchen - September 2, 2018

Sunday & Monday

Mexican Goulash

I made enough of this on Sunday to carry over into Monday as well.

Tuesday
Creamy Crockpot Chicken & Dressing

I worked on Tuesday, so wanted to try a new to me crockpot dish from Moss Family TV.  I recently found their YouTube channel and have really enjoyed watching it. 

Putting a meal into the crockpot in the morning definitely helped me out. I did all the meal prep on Monday and then didn't have to cook dinner when I got home on Tuesday. All I had to do was clean up the dinner dishes. 

I also soaked some chickpeas overnight Monday and had them cooking in the Instapot before I left for work. 

The next day I turned the chickpeas into a mock tuna salad. I just mashed the beans and added my usual tuna ingredients and we ate this for lunches for the remainder of the week. 

Tuesday I worked in a room with no microwave, so I took my lunch in my mini crockpot. 


Speaking of Crock-pot, I didn't know they made a crockpot just for gravy. We saw this at the thrift store the other day. I thought it was so neat.



Wednesday

Smoked Sausages in BBQ Sauce
Rice & Cheese
Green Beans & Onions

Thursday

We treated ourselves to dinner out today because we have not eaten out for most of the summer and worked hard on our goals. 



Since I was off and had extra time I made some homemade granola bars and sliced some apples and placed them in the dehydrator for apple chips. 



Friday

Philly Cheesesteak Sloppy Joes

As I mentioned before, I've been watching Moss Family TV on YouTube. Falon made this recipe for Philly Cheesesteaks, and we tried it for dinner on Friday.

My daughter really liked it and I thought it was just OK. I don't think you need to use any buns for this and neither did my daughter. So next time we will just serve it without buns.

    That's the first time I saw a crockpot for gravy. 😊
    I need to use my crockpot more often. I used several frozen portions (sausages, lentils) and also had brown rice, chicken, carrots, cauliflower and salad this week.
