Snow Day today! This is the fourth day that I've lost work in the last week due to snow, and there is more snow in the forecast for Wednesday evening. I like snow, but I also need to work. I am grateful though that we have power. There were 300 electric poles broken in the winter storm on the Cumberland Plateau and authorities are saying it will be days before they get power restored to everyone. So, I spent the day in the kitchen cleaning and making things to have to eat this week.
I made a Potato Bake recipe from the Low Cost Living - Self Sufficient website today. I like this dish because it involves plain and simple food. Onions, potatoes, vegetable broth and it tastes good and was very frugal to make since I used potatoes and onions that were given to us from a friend. I really like that website too as there is a lot of good information there on living frugally.
I also made a Farmer's Casserole recipe from the Taste of Home website. I didn't like this recipe very much, but my family liked it. I used a small bag of ham that I had along with a small bag of grated cheese from the freezer. I used some green onions, eggs, and hash browns that were given to us, so this was a pretty frugal recipe as well.
I made ham and bean soup today and finished the potato leek asparagus soup I started yesterday. Now we have enough leftovers to eat for the rest of the week without any more cooking, just heating up. When we lived in the Poconos we had a woodstove and the power would inevitably go out often in the Winter and I used it to cook on too. My next house will have a woodstove....
I love to have leftovers and not have to cook for the rest of the week. Good for you! :) My next house is going to have one of those wood heaters on the outside of the house, and solar electric, and a solar shower, and huge garden. Ha Ha...love to dream. :)
You have a super blog. You also live in one of my favourite places in the world. We love TN and the Smokies. Haven't been for a couple of years, but we will be back.

Thank you so much. It's so nice to have you here. I do love it in TN and even though we are having some snowy weather right now, this is so much better than where I grew up near Chicago when we had to get out and shovel snow all winter long. You probably know all about that being in Southern Ontario. It must be beautiful there.
West TN may have a few snow flakes this afternoon. Mostly, there has been sleet but not much. The plains of West TN are unlike mountainous East TN. Moneywise, I live in a low cost of living region, which adds much to every-day living, as well as educational, cultural, historical, and the Mighty Mississippi River.
For my family, there is always ready-to-eat homemade foods in freezer. No need to add to cost for groceries. Spending $50 for one take-out monthly would buy more than 8 pounds of meat at $6.
