I was inspired today while reading a message board about saving on food to try something different for lunch. I knew I had a roll of Grands biscuits that had been given to us, and I had a package of bologna, and some cheese sticks. So, I gathered up all my ingredients and while I was doing that I found a package of hotdogs with four hotdogs left inside.
Rather than use the bologna, I decided to use the hotdogs and cut those in half and also cut four of the cheese sticks in half. Rolled out each biscuit to make it a little bit bigger and then made eight Pigs in a Blanket.
My daughter hadn't been eating the cheese sticks, so I decided to use them in something like this that I knew she would eat, and she loved them. I even have some leftover for breakfasts this week. Here is the finished product:
Dinner today is Meatloaf, Mashed Potatoes, and Steamed Broccoli. Since I was already making meatloaf and had enough ground beef, I went ahead and made four meat loaves. I gave one to my Dad, and will freeze the other loaves for dinner another day. I also made a gallon of Iced Tea. :)

Clever use of those ingredients. I used to buy cheese sticks, but the fad soon past and they were starting to linger in the fridge. Not an inexpensive item, either. So, I cut the sticks into cubes and mixed up a batch of meatballs, using a cube of cheese in the center of each one. THe kids absolutley loved them, and continue to ask me to make them again. I will, just using cheese I cut up myself. Much more affordable!
